Experimental Baking #1- Confetti Crunchcakes

Our first recipe post! We're warning you these "crunchcakes" are a wee bit dry! (Okay, quite a bit dry, BUT WE DIDN'T HAVE A RECIPE!)

Ingredients
LOTS of sprinkles
2 1/4 cup cake flour
1 1/4 cup granulated sugar
2 eggs
1 tsp. vanilla extract
a pinch of salt
1/2 cup (1 stick) butter, melted
1 tsp. baking soda
1 cup milk
*SECRET INGREDIENT*- a little bit of plain popcorn (popped)

Preparation - makes about 18
I. Preheat the oven to 350 degrees.
II. In a medium mixing bowl, mix together the eggs, vanilla, butter, and milk. Set aside.
III. In a large mixing bowl, mix together the flour, sugar, salt, and baking soda.
IV. Gradually stir in the wet mixture.
V. Stir the sprinkles. Then add more until anymore sprinkle would make it disgusting. Then add more.
VI. Put the popcorn in a sandwich bag. CRUSH IT!!!!!! (Which by the way, is GREAT for getting your anger out!)
VII. Fill each cupcake tin halfway with batter. Add a layer of popcorn. Finish filling each tin.
VIII. Bake for about 25 minutes. Cool.

Decoration
Well, you see we attempted to make frosting, but, we kinda epically failed! So instead we covered (DOUSED!) each crunchcake with powdered sugar. It didn't fix the moisture issues, but it tasted awesome!
